I found this recipe on Pinterest!  🙂  The original blog it is from is www.plainchicken.blogspot.com.  No photo because we left our camera at my folks house…sorry.

Anyway, I tweaked it a little and made it for the July freezer swap with my friends.  That means I had to make it for 6 families.  Instead of giving everyone a 9 x 13, I divided each 3 recipes into two 8 x8 pans.  It was pretty tasty, though not too healthy and I would definitely make it again.  Oh, and the added bonus NO THAWING REQUIRED!!

Here is the recipe with my changes:

Ranch Baked Potatoes

2 (16 oz.) containers sour cream  (I tried to reduce this, but could not seem to coat the potatoes without this much sour cream!)

2 cups cheddar cheese, shredded

1/3 lb. bacon, cooked & crumbled

2 packages Ranch dip mix (It was really Ranch-y, I would reduce this next time.)

1 large bag (mine were 30 oz. or 1 lb, 14 oz.) frozen hash brown potatoes (The stringy kind.)

To Freeze:  Combine first 4 ingredients, mix in hash browns.  Spread into one 9 x 13 pan or two 8 x 8 pans.  Cover for freezing (if Pyrex, just put the lid on….if aluminum, use plastic wrap and heavy duty foil).

To Serve:  Remove plastic wrap and foil or lid.  Bake at 400 for 45-60 minutes.


Zucchini Bread

Here is the recipe our family has been making for years!  This time I did 1 cup whole wheat flour, the rest white and it still turned out beautifully.  🙂  I love a slice spread with cream cheese……

Zucchini Bread

(makes 2 loaves)

3 eggs

2 cups sugar

1 cup oil

1 tsp vanilla

2 1/2 cups flour

1 tsp salt

1 tsp cinnamon

1/2 tsp baking powder

2 tsp baking soda

2 cups grated zucchini packed lightly (approx. 1 med-large)

-Preheat oven to 350 F. Grease pans with crisco and flour.

-Beat eggs 5 minutes until foamy. Add sugar oil vanilla.

-Sift flour, salt, cinnamon, baking powder, and baking soda; add to egg mixture.

-Grate zucchini pack lightly; add to mixture. Optional-fold in 1/2 cup raisins or 1/2 cup nuts.

-Bake for 1 hour.

*Can freeze grated zucchini-just thaw and pour out water.

Frozen Fruit Cups (from OAMM)


I made these last summer when I tried the July 2011 menu from Once a Month Mom.  My Hubby was requesting these, so while he was on travel, the kids and I (and Mom the photographer) made up a bunch.  He was thrilled when he got home and these were waiting in the freezer.  They are a healthy, cold, refreshing summer treat.

As for making with the kids, my eight year old sliced the bananas and poured in all the fruit.  My five year old put in all the liquids.  Then my eight year old used a measuring cup to divide up the mixture into single serve containers (you can see them behind my son).  It was a great group activity!
